Mediterranean Avocado Pitas

A Mediterranean take on avocado toast, topped with pan fried cauliflower, and toasted seasoned chickpeas. I believe that nowadays, avocado season is every season due to the popular demand of the fruit. Avocados have had a great piece in my heart ever since I was a child, I wanted to switch and step up my avocado game. That led me to combine it with some of my favorite items, taking it from a snack to a meal.

I had to keep it green in celebration for St. Patrick's Day, but this recipe might be the easiest thing on Cooking with Oliver. I believe that I say that a bunch, but my goal is to always keep recipes simple and beautiful that way you can easily recreate them.

The best part about this recipe is that it requires very little preparation, simply mash some avocados, cut and pan fry some cauliflower florets, season and bake some chickpeas, and toast the pitas. That is all you need to create this vibrant brunch snack that will impress your friends, and keep your place the best brunch spot.

Avocados have such a good source of natural fat and they are such a versatile fruit that they are a must have in any kitchen. From sweet to savory, they will always be there to save the day. Currently in New York City on spring break, and every menu of every restaurant I have been to included avocado in almost every meal. That is something I am not upset about, at all.

 

Mediterranean Avocado Pitas

yields: prep time: cook time:

Ingredients:

  • Pitas

  • 2 avocados, mashed

  • 2 tbsp. olive oil

  • 1 cauliflower head, seperated

  • 1 cup chickpeas, toasted and seasoned

  • 1 lemon

  • salt and pepper

Directions:​

  1. Toast pitas and place mashed avocado on top.

  2. Meanwhile, on medium high set skillet, pan fry cauliflower with the olive oil then continue assembling the pitas. Add chickpeas, cauliflower, season with salt and pepper.

  3. Squeeze lemon to bring in all the flavors together.

 

A new version of a toast, of an avocado toast. Easy, beautiful, and delicious.
