Blood Orange Salmon with a Citrus Salsa

Who needs some color in their life right now?! Me, myself, and I! (yes, probably you too)

While shopping around at the grocery store, I am always looking for new flavors to marry together to make my tastebuds explode. Even here in the sunshine state, February has been off to a gloomy and rainy start, and that is why I decided I needed a little pop of color!

I can guarantee that the moment you try this recipe, it will automatically be a favorite in your household. The blood orange and citrus notes compliment the perfectly cooked salmon for a beautiful symphony of flavors you need to try.

For lunch, I paired the salmon with a true Mediterranean salad, and for dinner, I paired this dish with a lemon orzo... The possibilities are literally endless so get creative!

Please keep in mind this recipe is using 3 pounds of salmon which is perfect for a gathering or even meal prepping! If you plan of eating on getting a smaller cut of salmon, make sure you adjust the ingredients.

 

Blood Orange Salmon with a Citrus Salsa

yields: serves 6 prep time: 15 minutes cook time: 15 minutes

Ingredients:

  • 3 lb. salmon fillet

  • 2 tblsp. brown sugar

  • 2 tblsp. olive oil

  • 2 garlic cloves, minced

  • 1 lemon, zest of

  • 2 blood oranges, thinly sliced

  • 3 blood oranges

  • 1 naval orange

  • 1 shallot

  • 1 jalapeño pepper

  • fresh cilantro

  • 2 limes

  • 4 tblsp. butter

  • fresh herbs

  • salt and pepper

Directions:

  1. Preheat your oven broiler to high setting and set the rack in the middle.

  2. In a bowl, mix together the brown sugar, olive oil, garlic cloves, lemon zest, and some salt/pepper. Place your salmon on a non-stick baking sheet then rub the mixture all over then place the thinly sliced blood orange slices. Then, broil the salmon for 10-15 minutes or just until flakey with a fork.

  3. Prepare the citrus salsa while the salmon is cooking. Take the the oranges, peel and chop them, also clean and dice the shallot and jalapeño along with at least 3 tablespoons of fresh cilantro. Mix your prepared ingredients in a bowl, then add the juice of 2 limes. Season with salt and pepper to taste.

  4. Melt the butter then add two tablespoons of your favorite fresh herbs (basil, rosemary, thyme, etc.) then add on top of the salmon when finished cooking.

  5. Serve the salmon topped with some of the delicious salsa and voilà, bon appétit!

 

Not only are your eyes happy after cooking this dish, but also your stomachs. One of my favorite ways to eat salmon, bon appétit!
