Cookie Dough Truffles

You can make these truffles using ingredients you already have in your house! It was brought to my attention that I never use an ingredient that is a household staple pantry item... CHOCOLATE!

I definitely consider myself a dessert person, and even if I am full after a lunch or dinner, I will ALWAYS get dessert. I will make room for that dessert, even if it means having to go up a size in pants.

Truffles usually fall under the luxurious treats category of the dessert section of your cook book, they are typically spherical shapes and are often coated with chocolate, coco powder, nuts, etc

The best part about these treats is that they are vegan, but I promise you that the flavor of these truffles will still satisfy your sweet tooth. It's definitely one of these snacks where you try and only eat one but end up eating all of them- left feeling dazed and confused, but laying there with a happy stomach.

The recipe below is the vegan one, but feel free to substitute the ingredients in parentheses if you'd like. Either way, I promise these truffles will taste the same! (the white chocolate chips you see in my truffles are from King David, a delicious vegan white chocolate.)

 

Cookie Dough Truffles

yields: 1-2 dozen prep time: 15 minutes chill time: 1.5 hours

Ingredients:

  • 1.25 cups flour

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup margarine (butter)

  • 1/3 cup granulated sugar

  • 1/3 cup brown sugar

  • 1/2 tsp vanilla

  • 2.75 tblsp soy milk (milk)

  • 1/2 cup semi-sweet chocolate chips (milk or white chocolate)

  • 2 cups dark chocolate, for coating

  • cocoa powder, for coating

Directions:

  1. Mix margarine/butter with sugars and mix until creamy, then add vanilla and soy milk/milk.

  2. Stir in flour, baking soda, and salt until well incorporated then add in chocolate chips. Then, chill for 1 hour in fridge.

  3. After the dough has chilled, form small balls to your size preference. Place them on a sheet lined with wax paper/aluminum foil and freeze for 30 minutes.

  4. To melt the chocolate, use a double broiler (a small pot inside, a big pot filled with water.) Coat truffles using dipping tools for the chocolate, or in cocoa powder- it's your preference.

  5. Chill in fridge for 10 minutes, then they are ready to get devoured... If for some reason you have some left over- store in fridge for up to a week, and voilà, bon appétit!

 

Those chocolate cravings are forever gone after these delicious and luxurious truffles. I hope you enjoy them just as much as I did, bon appétit!
