Roasted Herb Dinner Rolls
Oprah loves bread, I love bread, who doesn’t love bread?! These rolls can be used as a starter to avoid being hangry, excellent buns for your veggie patties, and a great snack just the way they come. They will leave you nice and warm, maybe even a little kinder to your loved ones. The rolls create the best aroma in your whole house during the baking process, that’s thanks to all the herbs that are baked into these little beauties. This recipe is vegan, but just like any other recipe on my blog, I promise no one will notice.
There are many different ways to work the dough, like a bread attachment on your mixer. I prefer to use my hands, although it is a messier option, I believe that if you are going to make a recipe, you need to put your heart and soul into you. Only 15 minutes of kneading will activate the yeast, leaving you with many delicious rolls.
When it comes to shaping or breading section of your dough, I just watched YouTube videos but you can bread your bread whatever shape or size your heart desires. As long as all of them are equal sizes for equal baking time, you're set for success. I don't braid on a regular basis, so at first it was a tad challenging but as you can see, the end results were great.
No guilt should be experience when biting through these delicious morsels of good carbs. Ever since being vegan, I believe that I dedicate a day a week to carbs. That has definitely helped me stay balanced and be able to get a little escape from the intense diet. At the same time, I'm surprised at the amount of bread that isn't vegan, and that is why I wanted to challenge myself to make an option that works with my diet.
Roasted Herb Dinner Rolls
yields: 15 rolls prep time: 2 hours 10 mins cook time: 25 mins
Ingredients:
3 cups (12 3/4 oz) all-purpose flour
2 tbsp. sugar
4 tsp. active dry yeast
3 tsp. salt
3 tbsp. dried Italian herbs
2 tbsp. nutritional yeast
4 tbsp. olive oil
1 cup water, lukewarm
1 cup almond milk, lukewarm
6 cloves roasted garlic, mashed
Directions:
In a bowl, combine flour, sugar, yeast, salt, herbs, and nutritional yeast. Lightly mix then add in water, milk, olive oil, and garlic. Knead by hand for about 15 minutes, if using a mixer, use the bread setting for 7-10 minutes.
Form a ball with the dough, coat well with spray oil, place back into bowl, and allow to rest/rise for 1 hour. You're looking for it to double in size.
Roll out your dough, cut out even pieces, and create your desired shape. Place rolls onto oiled baking sheet, and allow to rise again for another 1 hour.
Preheat oven to 350 about 20 minutes before bake time, then bake rolls for about 15-18 minutes, until golden and serve warm!
I roasted some garlic and soaked in some garlic oil that will be brushed on the rolls before serving! I said it before and I will say it again... Oprah loves bread, I love bread, we all love bread.
