Mediterranean Beet Pasta
Noodles made from vegetables have been very popular and while spring is upon us (even if it does not feel like it in some parts of the world,) there is no better way to kick off season with a dish that incorporates amazing mediterranean flavors.
Not only do beets offer you great health benefits offering you tons of: magnesium, fiber, and vitamin C. Beets are also beautiful, providing your dish with great colors.
To create the beet 'noodles,' I took three beets and used a spiralizer to create the noodle shapes! I've used my spiralizer for zucchini, squash, and now for beets; I was skeptical at first but it was way easier than I imagined and the end results were great!
I also wanted to bring out the beautiful flavors of the dish but adding some beautiful flowers I saw at the farmers' market.
In this dish, I used feta to make sure the mediterranean flavors were supported and complemented, but feel free to switch it out to your choice of cheese, or even a vegan cheese to make this a vegan dish.) I hope you enjoyed this dish as much as I did!
Beet PastaMediterranean
yields: serves 2 prep time: 10 minutes cook time: 20 minutes
Ingredients:
3 beets, spiralized
1 tblsp. olive oil
2 cloves of garlic, minced
2 tblsp. pine nuts, roasted
1/4 tsp. nutmeg
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
1 cup feta
1 tblsp. mint
salt and pepper
Directions:
In a pan over medium heat, add oil followed by the garlic and cook until garlic is a carmel color. Then add the spiralized beets and spices, and cook for 12-15 minutes for al dente.
With the last 5 minutes of cooking the beets, add the mint and pine nuts. Taste and add salt and pepper, or adjust seasoning as necessary.
Plate the beets and garnish with some feta and more mint, and voilà, bon appétit!
