Berry Pancakes with a Raspberry Sauce

Whether you have a bae or not, treat yourself on Valentine's Day, or any day honestly, with an amazing meal in bed. Couple easy steps and you are in route to light up your or your loved ones' tastebuds. P.S. roses are out, hydrangeas are in, you heard it here first! You can have these delicious pancakes as breakfast, lunch, snack, post-workout meal, dinner, dessert... you get the point? Also, this is another vegan recipe!

I am in full support of waking to these amazing pancakes any day, especially to have them in bed. A key to any person's heart, or at least mine, would be: a handwritten love note, hydrangeas, and obviously food. What else would one want to wake up to? Although this is themed around a day of love, you can make these pancakes all year around. They definitely will get you excited for summer, especially with the lemon and the fruit.

If you are deathly afraid, or allergic, to specific berries, exchange them for any fruit your heart desires. I believe in your creative skills, and feel free to tag me in your creations. Also, I used self-rising flour for this recipe, considering this recipe being vegan and being dairy-free, it was very helpful keeping the batter thicker. You can substitute regular flour but you might need to adjust water and oil level. Just reach out to me, and I will gladly help you out with that!

It was not only very interesting coming with the infamous "Valentine's" post, it was necessary. Whether you celebrate a day with a dark history that has now turned into a day of love, or you just love eating (totally me,) these pancakes took minutes to make! Not only were they super easy to make, but they made my tummy very happy and I am positive it will do the same to you.

 

Vegan Berry Pancakes with a Raspberry Sauce

yields: 10 pancakes prep time: 15 minutes cook time: 10 minutes

Ingredients:

  • 3 cups self-rising flour

  • 1/2 cup sugar

  • Zest of 2 lemons

  • 2/3 cup lemon juice

  • 1/4 cup vegetable oil

  • 1 1/3 cups water

  • 2 1/2 cups blueberries

  • 2 cups raspberries

  • 1/2 cup agave sweetener/nectar

  • 1/4 cup lemon juice

Directions:​

  1. For the batter. In a bowl mix flour, sugar, and lemon zest. Mix juice, oil, and water in a separate bowl. Then, mix wet ingredients into the dry ingredients bowl. Then fold in blueberries.

  2. Allow batter to rest for 12-15 minutes. Meanwhile, start preheating a pan on medium pan, spray with non-cooking spray. Then, cook away, and make sure to prefect the flip!

  3. For the raspberry sauce. In a blender, mix the raspberries, agave, and the lemon juice. Blend very well, then using a sifter, separate the liquid and seeds.

 

So on Valentine's Day or any day of the year, a couple easy steps and you're set. You should always treat yourself to something delicious, because you're perfect and you deserve it.
